Infused Cana Honey Cheesecake cupcakes

Makes about 24 cupcakes

Infused Honey Sweetened Cheesecake Filling (based on)
2 lbs. cream cheese
4 eggs
1 T. vanilla
2/3 cup infused cana honey
1/2 cup cream or milk

Graham Cracker Layer (based on)
6 1/2 ounces graham crackers (12 crackers), finely ground (1 1/2 cups)
2 1/2 ounces (5 tablespoons) unsalted butter, melted (substitute cana butter or oil if you like, I used infused coconut oil)
1/4 cup sugar
1/3 teaspoon salt

--- Create the crust layer ---

1.) Preheat oven to 350F. Put cupcake liners into your tray.

2.) Pulse graham cracker crumbs, butter, sugar, and salt in a food processor until combined.

3.) Put a small amount of graham cracker mix into the bottom of each of the cupcake liners, try to plan it so there is an equal amount, enough for 24 cupcakes (about a heaping tablespool)

4.) Place the cupcake tray into the oven for 10-12 minutes

--- Create the cheesecake layer ---

1.) Bring cream cheese to room temperature. Blend cream cheese until fluffy. add eggs, vanilla, cream and cana honey.

2.) Fill each of your cupcakes, with freshly baked graham cracker on the bottom, with the creamcheese mix

3.) Bake at 350F for 30 minutes, or until golden brown.

4.) Let cool for 15 minutes, then cover and place in the fridge overnight.

Infused Coconut Oil No Bake Cookies

Based on ( https://www.goldenbarrel.com/recipe/coconut-oil-no-bake-cookies/ )

1/4 cup oats
1/2 cup Infused Coconut Oil (I had made 2 cups of coconut oil with 14g of bud in my infuser)
1/2 cup peanut butter
1/2 cup milk
2 cups Sugar
1/4 cup cocoa powder
1/2 tsp salt
1 tsp vanilla

1.) In a measuring cup, add 1/2 cup of infused coconut oil, 1/2 cup of milk, and the 1/2 cup of peanut butter (adding the peanut butter into the liquid just makes it easier to measure out). Put it into your pan at a low heat (~120F)

2.) Add coco powder and vanilla into the pan and lightly stir.

3.) Slowly mix in the 2 cups of sugar.

4.) Heat and mix thoroughly few minutes to mix in the coconut oil and let the sugar dissolve and melt down a bit.

5.) Add in the oats and mix them in thoroughly

5.) Place spoolfuls onto wax paper and shape them into proper cookies.
